Pinapple-jalapeno marmalade fail

I was very ambitious this past weekend and decided to make a recipe I saw on Ingrid Hoffman’s Food Network show.  It was a super-easy marmalade recipe with only five ingredients.  A culinary slacker’s dream.

But folks?  If Ingrid Hoffman tells you to use a can of pineapple in juice, do not go out and buy yourself a can of pineapple in heavy syrup because there ain’t no one holding onto the spoon in this picture.

And just so you know I’m not lying, let’s pull  back a bit…

I tried to spread some of this stuff on an English muffin and it was like eating an English muffin topped with a pineapple-jalapeno Jolly Rancher.  I put the sticky glop in the pan with some water to re-liquify it so that it would set up into actual marmalade.  Except I added too much water and now have a very sweet pineapple-jalapeno soup.

It sounds good at least! Sorry about your luck! I know how you feel though, I’m trying three new recipes today and I just realized I am out of onions, so I used onion soup. Hope my substitution works out a little better than yours did!

And I’m sorry but I had to laugh at your cooking FAIL. That is SO something I would do! Like the time I made chewy peanut brittle. Or the time it looked like my four year old made the cream cheese fruit dip (that I’m told is supposed to take 5 minutes and 3 ingredients, yet it was EXPLODED all over the kitchen counter). Ah, yes…good times.

I’m sure the local grocery has some LOVELY marmalade you could purchase for your muffins. ;-)

Colleen-Thanks! And yes, I could go out and buy me some marmalade, but that sense of accomplishment as I ate the English muffin just wouldn’t be there.

Coco-I hadn’t even thought of that. I’d still probably have to give credit to Ingrid Hoffman though.
